Craving something sweet but Paleo – grain-free, refined sugar-free and gluten free? Bake these moist and delicious muffins today! They make a great on the go snack or breakfast with your morning protein shake.
Paleo Banana Blueberry Muffins
Makes approx. 1 dozen muffins
Ingredients:
4 bananas
4 eggs
½ cup almond butter of choice
½ cup coconut flour
4 tbsp. coconut oil, melted
½ tsp. cinnamon
1 tsp. baking soda
1 tsp. baking powder
1 tsp. vanilla extract
¼ tsp. Real Salt or Himalayan Sea Salt
1 ½ cups of blueberries
Instructions:
Preheat muffin to 350°F
In a large bowl, mix together mashed bananas, eggs, coconut oil, vanilla extract and nut butter until fully combined.
Add coconut flour, cinnamon, baking powder and soda and salt to wet ingredients and again mix until all is well combined. Fold in the blueberries.
Pour batter into lined muffin pans.
Bake for 22-25 minutes for regular sized muffins, 11-3 for mini-muffins or 25-30 minutes for jumbo muffins. Insert a toothpick into the muffins to make sure they are cooked through.
When ready, remove from oven and allow to cool in pan for 10 minutes, then remove and allow to cool completely on a cooling rack.
